I think every Japanese people have been eaten fried egg (卵焼き).
However, can everyone make it? I will tell you how to make it.
Fried egg is different from omelets. It is one of famous Japanese food. I work at restaurant. Fried egg is most popular menu in my restaurant. I asked a cook that how to make delicious fried egg.

First, you need some eggs, soup stock, some spice like sugar or salt. Soup stock is Japanese said Dashijiru (だし汁). You beat eggs in a bowl. You should use two or three eggs. Eggs are separate of the yolk and the white. Beating is the secret of delicious fried egg. If you enough to beat, you should more and more. That makes easy to bake later.

Second, you make soup stock. The stock made by sea tangle. You put sea tangle into boiling water. Soup stock has many kinds. For example, first stock and second stock. It is order of making. The first soup stock is highest class thing. The first stock is used soup like Osuimono. You should use the second stock to make fried egg. You put the soup stock into the bowl. If you like sweet, you can add sugar. If you like salty, you can add salt or soy sauce. It depends on your taste. After that, beat one more time.

Then, let’s prepare for a pan. A square pan is the best to make fried egg. We can get it 100 yen shop. Don’t too heat!! Please turn the gas down. If you keep over high flame, the eggs will scorch. Use lots of oil. After the pan gets warm up, you put the eggs into the pan. You have to think the quantity because you use to divide the eggs three or four times.

When it becomes to brown, please roll up like a paper map using chopsticks. And the baked egg moves to edge of the pan and spread oil again. You put egg into the space of the pan and roll up the same as first. Then, don’t forget pour the egg under the first baked egg. Please repeat that till the egg runs out. It is completion! You cut it as you like.

Moreover, it is better to garnish granted radish, mayonnaise, cutting long green onion, cod roe cream or soy sauce. Finding any other spice is also good idea. If you are particular about look, it is good to use Japanese plate.
